About Mellow Mushroom

Johnny Hudgins and Michael Shemtov Bring a Fresh and Healthy New Perspective to Better Pizza in Charleston!

Johnny and Michael couldn't be more different from each other, yet they share a common theme: And, of course, the love of pizza. After all, says Johnny, pie is round, like the circle of life, sound logic, and the Wheel of Fortune. Michael never doubted they would open and operate a Mellow Mushroom, they were just nervous that someone might beat them to it. Nobody did, and nobody can beat the menu, the flavors and the fixins. These two young entrepreneurs knew each other throughout school. But when they went their separate ways, something stayed with them. Johnny went where there was water, always fishing, competing in sailfish tournaments, scuba diving, and boating. Michael, on the other hand, was running around inside of his head, writing business plans at the College of Charleston, reading the Wall Street Journal, and trading options for casual entertainment. The decision to open the Mellow Mushroom in Charleston was made on Halloween night. Why Halloween night? Who cares. At least they finally agreed on something! And what a delicious agreement it became! In early 2000, they spent several months in Atlanta working at a Mellow Mushroom. They then spent six months looking for a location and cooking up ideas such as the mushroom door handles, out swinging bathroom doors, and a back bar aquarium. That fall, over 200 people applied and 100 were interviewed a full four months before opening. The culture that the opening staff created can still be felt today, with many long term committed employees who pursue excellence every day.
